La gama de vinos viejos de Valdespino es una gama de vinos únicos, envejecidos durante más de 20 años (VOS, Vinum Optimum Signatum 'vino óptimo seleccionado') y 30 años (VORS, Vinum Optimum Rare Signatum 'vino óptimo y extraordinario seleccionado'), vinos con mucho carácter, intensos, complejos y profundos. El Amontillado Coliseo procede de manzanilla de Sanlúcar y su edad supera, en realidad, los 30 años exigidos por el Consejo Regulador para tener la calificación de VORS, alrededor de medio siglo. Un vino cuyas criaderas de construyen a partir de manzanillas pasadas, concentrado...: pura polifonía de aromas y sabores, salino, seco y con un larguísimo y complejo retronasal.
Valdespino Amontillado Coliseo VORS procede de una solera iniciada a finales del siglo XIX con una manzanilla pasada de Sanlúcar de Barrameda que viajó a la ciudad de Jerez donde continúa hoy engrandeciéndose. Un amontillado único que lleva más de 120 años atesorando matices, afilándose y concentrando salinidad. Una gran copa para disfrutar en una tarde frente al mar junto a unas sardinillas o unas anchoas. Apenas 400 botellas.

The production region of D.O. Manzanilla-Sanlúcar de Barrameda is located in Exclusivamente Sanlúcar de Barrameda, Cádiz, España. Hasta 1964 se comercializó bajo la Denominación de Origen Jerez-Xérès-Sherry, reconociéndose posteriormente el carácter especial de la manzanilla dentro de los demás jereces.
