Desde el 1838, se encuentra en la desembocadura, en la bahía de Cádiz, del río Guadalete. Los vientos secos de levante y húmedos de poniente prominentes del Atlántico regulan la humedad ambiental manteniendo las condiciones óptimas para los vinos. La estabilidad y calidad de los vinos Gutiérrez-Colosía están garantizadas por una cuidadosa crianza por el sistema de criaderas y solera, siguiendo la mejor tradición de la comarca. Las Bodegas Gutiérrez-Coloso son las únicas que actualmente dan directamente al río Guadalete lo que le aporta la humedad perfecta para la crianza biológica de los vinos finos bajo el velo «en flor».

The production region of D.O. Jerez-Xérès-Sherry is located in Exclusivamente Sanlúcar de Barrameda, Cádiz, España. Hasta 1964 se comercializó bajo la Denominación de Origen Jerez-Xérès-Sherry, reconociéndose posteriormente el carácter especial de la manzanilla dentro de los demás jereces.
