Uvas procedentes de agricultura ecológica y con una sanidad impecable, de las cuales se obtiene el vino base al que se le aplica el "Methode Champenoise" inmediatamente después de la primera fermentación. Criado un mínimo de 15 meses sobre lías, sale al mercado sin licor de expedición. No se adicionan ni sulfitos ni ningún otro producto en todo el proceso de elaboración.

The production region of D.O. Cava is located in La denominada región del Cava, que comprende fundamentalmente la comarca catalana del Penedés (provincias de Barcelona y Tarragona), donde se encuentra San Sadurní de Noya, el centro de producción más importante. El cava también se elabora en otros 159 municipios de España, de las provincias de Barcelona (63 municipios), Tarragona (52 municipios), La Rioja (18 municipios), Lérida (12 municipios), Gerona (5 municipios), Álava (3 municipios), Zaragoza (2 municipios), Navarra (2 municipios), Badajoz (1 municipio) y Valencia (1 municipio), que en su conjunto configuran la zona de producción denominada Región del Cava.
