Vendimia manual con pequeñas cajas de 10 kg de uva proveniente exclusivamente de la propia finca. Vinificado con pequeñas tinas de 25 hl. a baja temperatura. La fermentación se ha parado cuando el vino tenía el azúcar residual apropiado para generar la fermentación en botella, por lo que en la tirada no se ha añadido nada de azúcar. De esta manera todo el azúcar de la fermentación en botella proviene de la misma uva. Crianza en botella de 42 meses. Este vino irá desarrollando en botella la complejidad de los espumosos de clima frío, haciéndose cada vez más integrado.
