Este vino forma parte del proyecto Rolland & Galarreta, una iniciativa en que confluyen dos culturas del vino: la francesa y la española. Así, a la sabiduría del famoso y reputado enólogo francés Michel Rolland, consultor de algunas de las bodegas más reputadas del mundo, se suma la experiencia del fundador de Araex & Spanish Fine Wines, Javier Galarreta, uno de los principales nombres en materia de exportación de vinos españoles. Para la elaboración de su verdejo en Rueda, Rolland y Galarreta han contado con las uvas e instalaciones de la bodega Val de Vid, en Valladolid. Allí, el mosto maceró en frío con las pieles de la uva para potenciar los aromas característicos de la variedad. Después, la fermentación transcurrió a 16º C, con el claro objetivo de conservar el frescor primario de la uva. El contacto con sus lías le aporta estructura y volumen en boca y el pequeño porcentaje de vino (30%) que se cría en barrica nueva de Saury (Francia) durante dos meses se ensambla con el resto para dotar de profundidad y complejidad al producto final, un verdejo atípico y desconcertante que demuestra que todavía es posible elaborar vinos muy personales en la DO Rueda. Su color dorado habla de cierta evolución, y su nariz es una paleta completa de aromas: pétalos de flores (jazmín y azahar), membrillo, melón verde... En boca es cremoso y fresco, envolvente y terso. Con paciencia y concentración podemos llegar a imaginar que estamos ante un vino de verdejo, pero dista tanto de las elaboraciones más habituales que no resulta tarea fácil; alcanza un nivel de complejidad poco común que lo convierte en un vino especial, capaz de acompañar multitud de platos y sorprender gratamente tanto a neófitos como a expertos catadores. Un 30% del vino es criado durante 2 meses en barricas nuevas de roble francés.
