Las Uvas de la Ira blanco se elabora exclusivamente con uva albillo de cepas viejas (más de 50 años) plantadas con orientación sur sobre suelo de pizarras con cuarzo en Cebreros (Sierra de Gredos), en el paraje de nombre El Tejar, una zona de clima continental-mediterráneo. Es un auténtico y exclusivo albillo de pizarra, una pequeña joya que muestra la complejidad y la opulencia de este tipo de suelo, con notas cítricas en nariz y una refrescante mineralidad. De este vino sólo se elaboran unas 400 botellas. Fermentado en barrica de 300 litros y envejecido durante 11 meses en una única barrica de roble francés de 300 litros. Embotellado sin clarificar, ni filtrar ni estabilizar.

The production region of D.O. Méntrida is located in El norte de la provincia de Toledo, en España, en los terrenos situados entre el río Tajo en su margen derecho y la sierra de Gredos. Regada por el río Alberche, incluye 51 municipios teniendo como centro de la denominación, la localidad de Méntrida, y como sede la localidad de Fuensalida.
