Elaborado con vinos de la variedad Chardonnay, los cuales son acetificados muy lentamente mediante un método artesanal (sistema estilo Soleras), para poder preservar al máximo las cualidades del producto. Estos vinos, parcialmente acetificados, continúan la acetificación, junto con mosto de la misma variedad, en barricas de roble de 300 litros. Con la intención que el color no enmascarara algunos platos, empezamos a trabajar en un agridulce de Chardonnay. Suave, agridulce y transparente, este vinagre es ideal sobre todo con platos a base de pescado y marisco, aunque sus posibilidades son ilimitadas. Hay que destacar que no filtramos el producto para poder mantener al máximo las cualidades iniciales. Esto supone que puede producir un ligero sedimento, totalmente natural.
