Los vinos de hielo son la gran especialidad del valle del río Mosel, una zona con suelos de pizarra de gran desnivel, donde se encuentra el vino de hielo original. El Eiswein es un vino de carácter único, que se vinifica de uvas que han alcanzado una concentración excepcional tras haberlas dejado helarse en la misma vid a temperaturas de -6º y -8º C. Su evolución predispone al envejecimiento en botella casi sin límite, como mínimo durante 30 años.
