Emilio Lustau S.A. fue fundada en 1896 por José Ruiz-Berdejo. En 1940, su yerno Emilio Lustau Ortega trasladó la bodega al antiguo barrio de San Jaime, en el casco antiguo de Jerez de la Frontera. Desde 1950 hasta ahora, la firma es exportadora de vinos de Jerez. En la década de los 70 la compañía continuó su expansión. Primero, construyendo nuevas naves con bodegas en la finca familiar de Nuestra Señora de la Esperanza. Después, a partir de comienzos de los 80 y bajo la dirección de Rafael Balao, se convirtió en una de las compañías más innovadoras de Jerez. En 1990 la dirección de Emilio Lustau S.A. cambió al pasar a manos de la conocida compañía Luis Caballero SA, productora de licores y espirituosos y del famoso Ponche Caballero, el licor más vendido de España. En junio de 2008 Lustau adquirió cuatro de las marcas más importantes en la historia del vino de Jerez, La Ina, Botaina, Río Viejo y Viña 25.
Lustau Puerto Fino proviene de una solera con una edad media de 5 años en El Puerto de Santa María. Un fino seco, ligero y con un suave recuerdo marino y de levadura. Ideal con el aperitivo, servido entre 7 y 9ºC en copa de vino blanco.

The production region of D.O. Jerez-Xérès-Sherry is located in Exclusivamente Sanlúcar de Barrameda, Cádiz, España. Hasta 1964 se comercializó bajo la Denominación de Origen Jerez-Xérès-Sherry, reconociéndose posteriormente el carácter especial de la manzanilla dentro de los demás jereces.
